Our Story

Chocolate was always present in my life — but understanding it changed everything.

 

 

While living in London, curiosity became discipline.

I wanted to understand how flavour is built, how texture is shaped, and how a cocoa bean transforms into something layered and expressive.

I trained in the UK with Callebaut and later continued my studies with École Chocolat, learning the craft from its foundations.

What began as curiosity evolved into precision — developing original recipes, refining technique, and mastering each stage of the bean-to-bar process.

When I returned to Lebanon, I built Kōkō⁹ around one principle: intention in every step.

The name reflects both origin and process.

Kōkō⁹ refers to the cocoa tree and its seed — the true origin of chocolate — grounding the brand in the ingredient at its source. The “9” represents the nine stages of our bean-to-bar steps:

where every creation is made with respect for the ingredient, the craft, and the process behind it.
